The maceration of the bone with Alcalase leads to very clean results in a short time. The bone is not affected, so that the finest bone structures are retained.
Remove the bones roughly from the flesh and immerse them in 1-2% saline. Bones prepared in this way can then be transferred to the maceration bath. If larger objects are treated, it is advisable to preheat them in warm water (as well as in frozen material!).
Maceration in the Alcalase bath, standard recipe:
20 grams of Alcalase per liter of tap water of 55 °C
10 grams of salt per liter of liquid
1-5 gram Supralan UF per liter of liquid
possibly 1-5 grams of Supralan 67 per liter of liquid
0.5-1 gram Peramit LPW (bleach) per liter of liquid
It is very important that the bath with sodium carbonate (soda) is adjusted to pH 7.5 to 9. The bath must be maintained at 55 °C throughout the period. The most advantageous for this purpose is a maceration or a heating cabinet, but it is also feasible with an old oven, a heating element with heating control, etc. After 12 to 48 hours (depending on the material) the bones can be removed and rinsed. The material is then degreased and bleached with hydrogen peroxide. The bath can be used several times in succession.
Store Alcalase concentrate in a cool place (4 °C in the refrigerator). Shelf life: 1 year Disposal of the liquid: no special precautions required, Alcalase is biodegradable. Keep in mind local and official regulations.
